If there was ever a sentiment indicator for economic uncertainty and fear, this would be it.
As of April 2011, major distributors of freeze dried food, namely the Mountain House brand, are indicating that shoppers should expect delays of nearly six months on any orders placed today:

Other large distributors we contacted indicated similar shipping delays, with many simply marking their freeze dried food inventory as completely “out of stock.”
Mountain House has advised they are expanding their production facilities, but this upgrade will not be completed until the third of fourth quarter of 2011.
When we first covered the shortages of freeze dried food in December of 2010, a spokesperson for Mountain House, the largest freeze dried food manufacturer in the world, indicated that they were estimating the shortage to abate by February or March of 2011. In February, we received an update from Mountain House, which further pushed out the availability date to the Summer of 2011, and feedback from the largest freeze dried food distributors indicated shipping delays of 30 – 60 days. This most recent alert suggests that while freeze dried food manufacturers are working round the clock, demand for emergency supplies continues to sky rocket at an unmanageable pace.
Economic uncertainty, fear of inflation, government policies, natural disasters and the mysteries surrounding the 2012 doomsday date have been cited as the primary reasons for the parabolic spike in demand over the course of the last six months.
Because there will likely be no relief for any of those fears in the near future, we suggest to our readers that demand will continue to increase well into 2012, and question whether the new facilities being built for freeze dried food production will be enough to offset demand. As more people come to the realization that things may not be exactly as they seem, further demand will likely flood the market going forward.
Due to the uncertainty in the freeze dried food market, those concerned with acquiring quality, long-term food storage should consider and act on other options.
As we’ve suggested previously, dehydrated foods and MRE’s (Meals Ready to Eat) are one option that remains available at major emergency food distributors. The other options would be to self-stock and package dry goods, like the 11 Emergency Food items that can last a lifetime, including wheat, rice and beans. Most have a shelf life of 20 – 30 years and provide a well balanced, nutritious diet in the event of an emergency, widespread disaster or protracted crisis.
Well as of now the grocery stores still have food. Sore what you eat and eat what you store has always been the smart strategy. Some freeze dried stuff mixed in is good but I wouldn’t want to eat that stuff every day, too much salt.
I realize that the on-line stores are out but you might try the locals. My local sports shop has shelves of everything freeze dried from Mountain house including freeze dried ice cream (blech). Personally I liked dehydrated better because I did it myself and know where it came from and what went into production.
I believe the fear of radioactive food ending up on American dinner tables has a lot to do with the recent spike in freeze dried foods.
In my area places like Gander Mountain, Bass Pro Shop, Walmart, and some back packing/kayak stores have freeze dried foods. But any canned food with a long shelf life is better than nothing. The real panic buying will occur when the sheeple stampede.

I agree with cshellz. I recently went to costco and they were selling freeze dried food in bulk. There was plenty for people to fill their carts up with. If the online companies are out, check at the super stores like costco and sams.
Military MRE’s are available everyday at the commissary where I shop. Less than $7 for the good ones. Little tabasco bottle or A1, skittles/M&M’s & heater.  Apple smoked filet mignon is best. The sushi steaks even have chop sticks with soy.

I prefer rice over beans, because it takes less than 15 minutes to cook, and beans take much longer and it’s not efficient in an emergency.Â
Rice from India doesn’t taste that good, that’s why it’s so cheap. I would rather pay a little bit more and taste very good alone. You should try a small bag before buy a large one, because I’ve thrown some away because they don’t taste good.

Hey, Jane. I bought about 400 pounds of rice back in November. Just stuffed them in a closet. This past weekend I put them all in 5 gallon buckets with metallized liners. Everything was in perfect condition and that was 6 months.

@Jane, put it in mylar bags (I do 5lbs per bag) and add in oxygen absorbers. Then store it at a constant temp of around 65f and it should last 20 years before it discolors (still edible).

As for beans, you cannot just eat rice. Soak beans 24hrs in plain cold water then they cook just as fast as rice. I got pinto beans from Safeway today (last day they’re on sale, 20# bag was $9.99, half price).

  Well, I know this much: I ordered 5 5-Gal buckets from USA Emergency Supply, and it took them a month to get those to me (whereas 6 months ago it was only taking a week).
  They claimed they were having trouble keeping up with demand.
  In other words, it ain’t just the freeze dried foods that are flying out the door at an unreplenishable pace.
  This makes me think that ordering any sort of food/water/storage products on-line is becomming a risky investment (i.e., No guarantee you are ever going to get your stuff).
  Glad I planned ahead, and don’t have to start now, at this late point.
  I think the best advice for people at this late juncture would be to start with canned goods from the grocery store.
  Then move on to the Mormon home food storage depot in your town (go to providentliving.org to get addresses), so you can take delivery immediately.
  Then after you have the basics, see if you can still get any food grade buckets and mylar bags. Â
  If not, at least you will have something.
I already have quite a bit of stored Mountain house food, but if need be, you can always get to the store the moment that a US carrier is sunk by a Chinese ship or sub.
Any major attack on a US ship may mean the beginning of an EMP or worse, so remember, if you see a carrier sunk, get to the store for canned goods!

Comments…..big buckets and barrels for food storage are fine and dandy to have…but i personally prefer using mylar bags and large metal or plastic coffee cans as well as other tins and canning jars…why? because it is alot easier to prepare a meal without having to open any container that contains mass quantities. plus, home canned foods are already cooked and can be eaten right out of the jar if need be..and i also prefer dehydrated foods over freeze dried…cost and being able to diy being major factors. right now in n.e.miss. strawberries are the deal of the week…buy alot of ’em and process for canning, drying or freezing. each week, find a deal and then deal with it..last week it was carrots. don’t forget that alot of those 6-10 lb cans of tomatoes, etc…can be reprocessed and stored in smaller containers plus they are cheaper to buy too.
People are starting to wake up. I go regularly to my local LDS Cannery. Was told this week that it is now closed to non-members (you can get in with a church member so I’ll have to ask one of my neighbors in the future).
They are about 10 times as busy as they had been just 8 weeks ago. Their wonderful volunteers are overworked & overwhelmed. They told me that everyone coming in is very, very worried.
They’ve raised prices about 3-4 times in the last year. The latest one this week – a 12% overall increase.
We’ve stored LDS products, Sam’s stuff, canned stuff, dry goods, water, freeze dried items, soap/hygiene products, plenty of ammo, basically a huge variety. Diversity is key. And don’t forget some “comfort” foods if you have kids & grandkids. They are the real tragedy if all this goes down.  It breaks my heart just thinking about it.
Mountain House definitely isn’t the only supplier but they are all running short.Â
  I think the point about availability of fuel for cooking is quite valid, and time may be short in the early days following a major crisis.
  It is far from the best, but Minute Rice can be made edible very quickly. It is quite expensive if a large quantity is needed, but I am told that it has been pre-cooked and dried. Think of this as prepaying for cooking fuel.
Dave, anything can happen. When this thing happened, we needed to find out how it happened and who would benefit from the disaster? The more educated you are, the more you see how some theories are just impossible.Â
At the moment, China has a lot more to benefit and is very busy producing products for us; while America produces almost nothing. Based on several recent events, I know China is not ready to attack America by itself. Â

ive been prepping for about 4 months and have told friends and relatives to do the same. some are but most arent……so what do you do when the SHTF and they come to you for help? i cant prep for everyone…..i guess there would be a pecking order…..my kids first then mom,dad, brother sisters then so on.

In response to the recent concern of FEMA purchasing Mountain House products:
FEMA posted the following RFI (Request for Information) on 1-20-2011. In the RFI, FEMA was asking for information for 14M/day for 10 days. They then withdrew the RFI on 1-27-11. The RFI is a request for information only. It is not an order. In addition, this RFI was never sent to Mountain House. This is to confirm that Mountain House is not supplying FEMA or any other Government agency with Mountain House #10 cans or pouches.
The Federal Emergency Management Agency (FEMA) procures and stores pre-packaged commercial meals to support readiness capability for immediate distribution to disaster survivors routinely. The purpose of this Request for Information is to identify sources of supply for meals in support of disaster relief efforts based on a catastrophic disaster event within the New Madrid Fault System for a survivor population of 7M to be utilized for the sustainment of life during a 10-day period of operations.
As you know we have removed #10 cans from our website temporarily. The reason for this is sales of #10 cans have continued to increase. OFD is allocating as much production capacity as possible to this market segment, but we must maintain capacity for our other market segments as well.
Currently our inventory for both cans and pouches is all being shipped to our retailers. Once all of our retailers are back in stock 100%, we will put items back in stock on our own website. For the record, Sam’s Club sells the Augason Farms brand of dehydrated and freeze dried foods through their website. I ordered a few items about a month ago since beprepared.com has been out of stock or back ordered on almost everything for months now. I was pleased with the low competitiveprices/, low shipping, and fast delivery; it’s also backed by Sam’s member satisfaction guarantee.
Also, here’s a mfr. website for Mylar bags….they do sell to the public and have a very large assortment to choose from and are considerably cheaper than distributor sites, but you have to buy some sizes in bulk. They offer closed end and open end bags, which the latter you can seal with a clothes iron. Their customer service dept. is very helpful should you have any questions.

For those of you still in the prepping stage who may be concerned about alternative fuels or sources for cooking, a very simple and efficient cook stove can easily be fashioned from a large bean can or coffee can….just do a video search on You Tube for “survival stove.” I also found that a cotton ball dipped in vaseline jelly makes a cheap and excellent fire starter when using charcoal.

Here is another idea for some of you. If you have a friend who owns or operates a restaurant or deli, ask them if them about their supplier and what the supplier carries in the form of dried or dehydrated foods. As I own a deli, my supplier is US Foods and they have great dried refried beans, dried seasoned black beans, a chili mix that is great for ground beef or TVP. These are made by Basic American Foods. US Foods also carries several dehydrated potato products. All of these a good to vacuum pack and have an extended shelve life when packed properly. The products are also restaurant quality and taste good. If you know someone, maybe they would be so kind as to order them for you and the price is better than any store bought products.

@Terry, get a Rocket Stove as a back up for cooking. They will burn almost anything. I have used mine many times only using twigs and grass which you can find anywhere. Hell, I would burn furniture if I had to!!!LOL

Bacon grease can be pressured canned in canning jars. Google for directions, but basically you can it in 1/2 pint or pint canning jars for 75 minutes at 10 lbs pressure.
So the wife was bitching about my food storage and how I have a mental issue cuz nothing has happened. This has lasted 2 days now so this morning I order 5 more cases just to take the argument to the next level of mental illness. I hope she goes on with her tantrum cuz I need some other things too.

@Jane – My lead comment was sarcasm actually :). I get my rice from Costco and as far as I’ve seen they only carry Cali rice in the 50lb bags where I am. Though I make sushi at home and that rice is actually from Japan, but its 5lb bags.
@Jane – we buy only Costco 25lb. bags of rice. The “jasmine rice” they will get better the longer it sits in its original packaging. I have rice 5 years old and it tastes absolutely great. As far as beans go, use a slow cooker/crock pot or a pressure cooker. With a pressure cooker you can even cook your beans over a campfire using a grill!

Thank you for the tips regarding the rice. Rice sold by Costco is from India or China is often not a high grade. Indian rice is mushy and is still not done. Jasmine rice is probably from China and is tasteless. I prefer Vietnamese rice, it tastes so good by itself, and it’s perfect for survival or during a hyperinflation period or even now, with very little water and aprx. 7 min. cooking time. It smells so good, it’s fluffy and just right.

Regarding pressure cookers, they can be dangerous, my dad had problems with one when he cooked his beans. So use it with caution.

@ Marc, what are you doing on this site? If I want to spend my time or my money of food or frickin prostitutes it’s my perogative. There is nothing wrong with being prepared for the unexpected, whatever that may turn out to be. You have auto or homeowners insurance? This is a form of insurance also. If you don’t like it, fine, don’t prepare, but don’t critisize those of us that have made the decision to self insure.
Thanks for the tips on the pressure cooker Jane. The rice – my wife is Vietnamese and the Vietnamese only eat this rice so it has to be close to what the Vietnamese stores sell too.
Scott and Jane, I don’t usually post, but people. They make pressure cookers of all sizes and a little four quart one does cut cooking time and fuel by cooking under pressure, for that matter a good cast iron dutch oven cooks under about ten lbs of pressure. My dad cut himself once with a knife, but I have learned that my dad didn’t always make the best choices and I have learned to use a knife properly with out much problem.
As for rice, If I’m in a survival situation I’ll want to insure that my body is getting what it needs to work at it’s best and rice will not give your body all that it needs, make sure you have a diversified food storage program.

Here’s another shortage, a lot wont have any interest but I called Belt Hatcheries in Fresno, ca and they said they were out as far as June July and August for new chicks. And he also added this is nationwide, all of the hatcheries are way out on backorders.
One nice thing about Mountain House freeze-dried food is that it actually tastes good, so if nothing happens in the next two years (or at least until 12/21/12), then my investment is not wasted and I’ll have some tasty side dishes for several months.
Rachel, thanks for the tip I got a great deal on a package for 4 people. I just don’t have the time to package my own food and I want to be sure that it will not spoil in a few months. Keep prepping!

My girlfriend does not believe the SHTF theory, and she has not prepared for it. Although she has a high education, she is very naïve in many things.

Jane, whoa, I don’t believe I’ve ever posted here, and I only meant that small pressure cooks are great I bought one for cooking tounge actually from Caribou and Moose and have since used it for cutting cooking time for a ton of things. Really, dried beans and ham cooked in an hour. And I intended to mean, give them a chance. I read a lot posts and if I misread yours and I offended you my apologies, that was not my intent.Â

I was told Vietnamese products are hard too find, because it is a very small country, and they don’t produce a lot like China or India. Even countries that export rice, import some because their citizens prefer it over their own.

Got caught up in the rice comments… Costco sells a 50-lb bag for 20 bucks (at least they did a couple weeks ago). Calrose rice (medium grain), the best, IMO. Grown right here in CA.
Also Costco has food grade storage bins for 20 bucks. Cheapest I’ve seen so far, and good quality. I dumped 50 lbs of rice in it and it looks like I can probably dump in another 25 at least. I just went to look, to be sure, but I couldn’t open it! (hubby’s not home…)

In the past we have cheap oil which was sold by the Middle East. But the oil is now in the hands or the western elite speculator. The mainstream media said the gas prices are so high and now destroying our economy, but they did not tell you who is behinds this scheme.

Another emergency item that is selling out are the emergency cookers. I just tried buying a Crisis Cooker or a Volcano Grill but both Websites said they were sold out. One Website said they wouldn’t be stocked again until June. Quite disturbing.
I learned from a youtube video how to make a small stove from pop cans,lamp oil and a piece of cotton. I have some #10 cans full of fruit cocktail that when emptied I will make a bigger stove with and 2 wire hangers. Also picked up a metal can yesterday with some food grade 30 and 55 gallon barrels…the can held nickel in it for a foundry and I am going to attempt making a rocket stove with it….youtube is a real good learning source for a guy like me with my learning style…don’t buy a cooker, make one 🙂
